Sacha Inchi Oil Press-cake: Physicochemical Characteristics, Food-related Applications and Biological Activity

Sacha Inchi (SI) (Plukenetia spp.) is an Amazonian-originary nut, used for centuries as food the native people of Amazon rainforest that attracting attention worldwide a functional food. Because its high nutritional value, SI considered “super food”. In addition to content polyunsaturated oil, good source high-quality proteins, essential amino acids, dietary fiber, minerals, tocopherols, phytosterols, and phenolic compounds. This review summarizes physicochemical characteristics, food-related applications, biological activity oil press-cake. A perspective potential uses provided, contribution growing increasing interest in adding value this agro-industrial by-product. Additionally, overview gives insights into importance alternative plant-based protein, which has promissory applications food, pharmaceutical cosmetic industries.
